Today is good Friday and on getting up this morning I was a bit surprised to see frost on the car! But as the sun was shining it didn’t seem quite so bad. At around 11.00 phone beeped to say temperature had gone above zero yeh!
Thought I’d make a quick batch of wild garlic scones with the garlic I’d picked earlier in the week, and as there was quite a bit left over I decided to make some garlic pesto to use it up. Be good in pasta or with gnocchi for a quick mid week supper. I’ll add some asparagus and peas for a springtime meal.
I’ve really taken to using the wild garlic big time this year. Thought with all the time on my hands I could use it to experiment and come next year I won’t waste time with recipes I don’t care for. However haven’t found anything yet we haven’t enjoyed. Still to try out a soup. That’s for next week. We enjoyed some new potatoes this week with wild garlic butter. Very tasty and with pan fried salmon and spring veg it was not only tasty but was on the table in the time it took to cook the potatoes.
I’m always happy when I can do a meal with minimum fuss that we both enjoy and as I try to do meat free meals as often as possible this fits the bill perfectly. I have the wild garlic butter stored away in the freezer so even once there is none to pick we can still enjoy the flavour. I made some garlic bread earlier in the week using freezer butter and it turned out well. I’ll need to get picking and freezing before the season ends. Think I’ll freeze pesto too in small amounts.
Sadly we won’t be enjoying a family lunch this Easter. Again! Since we returned home we’ve only managed one π₯². With Robin’s birthday tomorrow it would have been a lovely double celebration. But sadly not to be. However all being well we’ll be enjoying all being together for an extra extravagant Easter/birthday celebration in 2022. Can’t wait.
However decided to be good to ourselves, well you have to, right? I have a joint of pork sitting in the fridge, with roast potatoes and veg and probably there will be a request for Yorkshire puddings so we have the makings of a nice Easter lunch. ( note to self, buy Bramley apples). Can’t forget the apple sauce. π
The feeling is this will be quite a weekend of feasting. For birthday dinner the request was for steaks. I’ll add the usual accompaniments, onion rings, mushrooms etc. Prawn cocktails to start off. Dessert to be decided, or maybe should forgo it and settle for biscuits and cheese.

A birthday surprise from our daughter and husband. Full of deliciousness. Even butter, jam and bread included. Have to admit to enjoying some of the bread toasted for breakfast this morning. The usual breakfast fare. Sausage, eggs bacon but also included is hogs pudding. I’ve never tasted this so looking forward to a new experience.
So as you can probably tell we have a fridge full of food and together we will enjoy a quiet Easter weekend enjoying and being thankful for what we have, and also happy that things are looking better and that soon we will all be enjoying each other company once more.
