Today didn’t quite go according to plan. A visit from family didn’t happen as we are being careful, as we’ve always been, about this new covid variant and none of us want to end up isolating and not being able to spend Christmas together. I was really disappointed but looking that it wasn’t cancelled but merely postponed. Let’s just keep fingers crossed we all keep healthy until Christmas next week 🤞🏻
The weather did nothing to cheer me up as the fog never lifted all day. It was grey and miserable. A day for staying at home for sure. A Christmas film was the order of the day. Watched The Coopers and have to say enjoyed it even though I’d seen it before
This photo was taken at three in the afternoon and had been like this since we woke up and just got worse. By the time Hamish was having his last walk we had to light him up to be seen. He’s never too happy about wearing anything apart from his collar and lead but it seemed like even he realised that he needed something to make him visible 😂
So it was without whining that he headed out. I think he actually enjoyed it.
Of course I had done a lot of cooking for the weekend, and bought in lots of breakfast supplies. The latter is now in the freezer, with enough left out for a nice full Scottish tomorrow morning. A rare treat.
Lasagne we had for tea, with leftovers to be frozen or eaten another day. A chicken pasta bake will also find its way into the freezer.
But the chocolate orange cheesecake will have to be either picked at for a few days with perhaps some of it going to a neighbour or two. It’s not a small cheesecake but a baked one to serve 10! I’m sure someone will be happy to take a piece off my hands.
So dinner over and with strictly on TV I thought a nice cocktail might help the day feel a bit better.
An espresso martini has been in my mind to make so tonight was the night. Got together the vodka, coffee liqueur and made the espresso. Put it all in cocktail shaker and shook!!! As I poured it out I was a little disappointed with the result. I knew it would taste ok but didn’t look as good as I’d expected. No foam. However we drank it and I was right, it tasted fine. I got on to finding where I’d gone wrong. The conclusion was that I needed more ice and a pinch of salt and needed to shake until I could shake no more. So now I will have to try again with hopefully the aesthetics matching the flavour. I’ll let you know.
